This quiche was a very pleasant surprise. The combination of tastes of goat cheese, leeks, and nutmeg was amazing. The result is a light and tasty quiche that goes well with a green salad. This recipe is very easy to make - I bought a pie crust and just took care of the filling.

Fluffy Cottage Cheese Pancakes
These are the softest pancakes I have tried. They are really easy to make and they taste great. When I make something else, like today, I only use half of the recipe, which is enough for two people. For the recipe click here.
Today I paired them with an old time recipe from my grandmother: sweet plantain omelette. To make this childhood dish I used one sweet plantain, fried it first, then put the egg batter (four eggs), let them cook for about 5 minutes and then finished in the broiler frittata style.

Whole Wheat German Pancake with Pears
Today’s brunch was a particular type of pancake. For starters the result is only one big pancake instead of a stack. This one is baked as opposed to fried for regular ones.
This recipe is tasty, light, with the right level of sweetness. The pears provide a unique texture. If you prefer you could convert from German to Dutch by changing the pears for apples.

Basil Tomato Tart
This was a surprisingly tasteful tart. The crust could be a little challenging… if you have a small food processor (4 cups or less) I would recommend to work in batches of half. I made a salad with lettuce, strawberries, walnuts and honey mustard dressing. It went really well with the tart. For the recipe, click here.

Simple Berry Crisp
Berries and granola is a great blend. Simple Berry Crisp is extremely simple to make. I used frozen berries; taste was not affected. For a lighter brunch this dish can be accompanied with yogurt or for a sweeter one with vanilla ice cream. Today we wanted a more abundant brunch so we had eggs as well. The combination was better than expected.

Harvest Frittata with Gruyere
Today’s Sunday brunch was this great frittata. It is very easy to make and extremely tasty. The combination of the vegetables with the gruyere cheese is delightful. The frittata can be combined with salad, fruit, or like today chick peas with tomatoes and onion.

Apple-Berry Baked Oatmeal
This dish is so easy to make you would not believe it could be so tasty, healthy, and satisfying. It still good the following few days; put the leftovers in the refrigerator and just reheat or eat cold when you are ready.
For brunch you could combine it with scramble eggs or if you prefer to keep tastes aligned you could serve with yogurt.
